Cuestión de arterias (*)
Los holgazanes presumen de haber
encontrado las causas de tantos males argentinos. Demasiadas teorías explican
por qué no hemos sido capaces de ningún logro colectivo, ahora que hay quien
sospecha que nuestros campeonatos mundiales de fútbol fueron ganados con la
cooperación de ciertas herramientas heterodoxas como juntas militares o manos
divinas.
Así, nos hemos cansado de
escuchar el latiguillo según el cual nuestros fracasos se deben a que somos un
crisol de razas, hibridez que por alguna curiosa razón no parece haber
perjudicado a los Estados Unidos, a Suiza o a Singapur. Esta imbecilidad no
sorprende en un país que homenajeaba hasta hace poco al legado español con una
fiesta que denominaba, de manera bastante fascista, “Día de la Raza”.
Otros simplificadores adjudican
un destino de fracaso a todas las culturas que, como la nuestra, se forjaron
con fuerte impronta del catolicismo. La prosperidad sería, desde ese punto de
vista, propia de los lugares en que triunfó la Reforma. La santificación que
los católicos hacen de la pobreza y su contracara, la forma en que demonizan el
éxito en las cosas mundanas, serían un obstáculo para que vivamos mejor. De
nuevo, una rápida mirada al mundo nos muestra que hay muchos lugares, como
Irlanda, buena parte de Alemania o Chile, donde mucha gente va a misa en BMW
sin sentirse por eso merecedora de ninguna penitencia.
La fuerte inmigración italiana
también es señalada como causa de que tengamos cierta propensión al desorden y
a la ineficiencia. Sin embargo, no se explica por qué no hemos emulado ni un
poquito, aunque fuera desordenadamente, un país que muestra universidades de
mil años, los automóviles Ferrari, una gastronomía popular admirada en todo el
mundo por su refinamiento, una educación pública de alta calidad, el Brunello
di Montalcino, el logro de haber vencido al terrorismo de izquierda y al de
derecha sin desaparecidos ni torturas con fiscales y jueces que aplicaron la
Constitución, e via dicendo.
Nadie hasta ahora, ni siquiera
Sarmiento, prestó atención a la comida.
El médico y antropólogo
brasileño Josué de Castro escribió una obra reveladora que tituló “Geopolítica
del hambre”. [1] No se refiere al fenómeno del hambre entendido en sentido literal sino al
hambre de los que comen todos los días, al hambre de los pueblos que se
alimentan de una manera desequilibrada ya sea porque les faltan elementos
esenciales o porque, al revés, ingieren alguna sustancia en exceso. El autor
explica una interesante serie de episodios históricos que tradicionalmente
adjudicamos a razones políticas o vagamente culturales y que en realidad vienen
a ser consecuencias de una forma desacertada de comer.
Como se sabe, el gaucho se
alimentaba gracias a una dieta que incluía casi exclusivamente carne de vaca.
La ingesta esporádica de mate y galleta no era significativa, sólo un recreo
entre un asado y otro. El exceso de colesterol en sangre fue generando un tipo
de individuo de alto nivel de ineficiencia, incapaz de cualquier tarea que
significara organización, coordinación con otros, apego a un método y un nivel
aceptable de entusiasmo.[2]
Ello explica que no conozcamos ninguna institución que haya sido fundada por un
gaucho (no hay que confundirse con las asociaciones tradicionalistas de hoy que
congregan a gente que se disfraza para desfilar en el Día de la Tradición,
porque sus integrantes son notarios, militares retirados, en fin, todos
oficinistas que juegan un rato a ser gauchos). Nuestro país prosperó, se llenó
de asociaciones mutualistas, hospitales, templos, bibliotecas y teatros no
gracias al gaucho sino a pesar de él, merced a los que descendieron de los
barcos. Ese progreso, coincidentemente, ocurrió mientras los inmigrantes
mantuvieron los hábitos alimentarios que traían de Europa o de Medio Oriente;
dicho de otra manera, el país progresó mientras los inmigrantes continuaron
comiendo más o menos sensatamente.
Por desgracia, en lugar de
civilizar al salvaje, muy pronto los recién llegados se barbarizaron y copiaron
lo peor del gaucho. Durante el siglo XX Argentina llegó a mostrar un consumo anual
per capita de carne vacuna cercano a los noventa kilos, lo que generó
una suerte de obstrucción arterial colectiva que nos viene impidiendo hasta
ahora tomar decisiones de manera racional; votar, entre ellas.
Entonces bastará con dar mucho
pescado y vegetales a la generación de nuestros hijos para que el país despegue
de una vez y para siempre.

Sluggards boast about having found the causes of the so
many Argentine misfortunes. Too many theories explain why we haven’t been able
to achieve anything collectively, now that there are suspicions that we won World
Cups with the help of heterodox tools such as military juntas or Divine hands.
As a result, we are sick and tired of the cliché
according to which our failures are due to the fact that we are a melting pot,
a hybrid condition which -for some strange reason- doesn’t seem to have been
detrimental to the USA, Switzerland or Singapore. Such stupidity is not
surprising in a country that until not long-ago paid homage to the Spanish
legacy with a holiday that used to call, in a rather fascist way, “Race Day”.
Others, who prefer to put it more simply, attribute
such failure-bound fate to all the cultures which, just like ours, were forged with
a strong catholic imprint. From their point of view, prosperity would be
inherent to the places where the Reform succeeded. Both, the sanctification of
poverty as promoted by Catholics, and its flipside, that is, the way in which
they demonize success in worldly things, are an obstacle to a better life. Once
again, a quick look around the world will show us that there are many places,
like Ireland, most of Germany or Chili, where many people drive BMWs to church
without necessarily feeling worthy of any penance.
Mass Italian immigration is also pointed out as making
us prone to disarray and inefficiency. However, it is hard to explain why we
haven’t emulated, not even a little bit, not even untidily, a country that has
one thousand-year-old universities, is the cradle of Ferrari, enjoys a popular
gastronomy acclaimed by the whole world for its refinement, as well as a high
quality public education; a country whose legacy to the world is the Brunello di Montalcino and, for the
record, has defeated both left and right-wing terrorism without resorting to missing
or tortured citizens, but to prosecutors and judges who simply enforced the
Constitution, and so on and so forth.
No one so far, not even Sarmiento, has paid attention
to food.
The Brazilian doctor and anthropologist Josue de
Castro wrote a revealing book under the title “Geopolitics of Hunger”[1]. It’s not about hunger literally
speaking, but about the condition of those who eat mostly an unbalanced diet every
day, either because they lack essential nutrients or, on the contrary, they
ingest certain substances in excess. The author explains an interesting series
of historical episodes which have been traditionally attributed to political or
vaguely cultural reasons but are actually the consequence of bad eating habits.
As you may know, the gaucho’s diet included
beef almost exclusively. The occasional intake of mate and biscuits was not
significant, it was just a little break between two barbecues. The excess
cholesterol in the blood gradually spawned a type of individual with a high
degree of inefficiency, unable to undertake any tasks that would require
organizational and coordination skills, methodology, and an acceptable level of
enthusiasm [2]. That would explain why there have been no
institutions ever founded by a gaucho (we are not talking about the
traditionalists’ associations that bring together people who dress up as
gauchos for the parade on Tradition Day -though are actually notaries, retired
military officers, or office workers who play at being gauchos for the fun of
it). Our country did thrive, and was filled with mutual societies, hospitals,
temples, libraries and theaters; although not thanks to the gauchos but despite
them, that is, thanks to the folks who got off the ships. Such progress, by
chance, took place while the immigrants kept their European or Middle Eastern
eating habits. In other words, the country succeeded while the immigrants went
on eating rather sensibly.
Unfortunately, instead of civilizing the salvages, the
newcomers slipped into barbarization and replicated the worst out of the
gauchos. During the XX century, Argentina reached an annual per capita
consumption of beef of almost ninety kilograms, which resulted in a sort of
collective arterial obstruction that has since prevented us from making
rational decisions, like voting, among others.
Consequently, it will suffice to feed the future
generations lots of fish and vegetables so that our country takes off once and
for all.
